Saltimbocca “Terramia”

Procedure:

Wash the yellow date tomatoes and slice the fior di latte mozzarella cheese. Saute and salt the previously boiled Swiss chard and fresh sausage in a pan. Cut the Saltimbocca in two and bake in preheated oven for 3/5′ min at 250 C°. Remove from the oven and season by first placing the chard, then the sausage to follow the mozzarella and cherry tomatoes. Last sprinkle the Saltimbocca with small pieces of peperone crusco and extra virgin olive oil.
