Saltimbocca “Baconfumè”
Preparation:
Wash the rocket, thinly slice the smoked scamorza cheese, add salt, and sauté the potatoes already cut into slices and previously boiled. Cut the peppers into long, narrow strips and cook them in a pan or in the oven with a little oil and salt. Grill the bacon in a pan for a few seconds to make it crisp. Cut the Saltimbocca in two and bake in a preheated oven for 3-5 min at 250°C. Remove from the oven and fill, putting the peppers, potatoes, bacon, smoked scamorza cheese and finally the rocket. Drizzle a little extra-virgin olive oil.
